STABILIZED AND AMBIENT PASTA

Ambient pasta is an innovation in the food industry, since it does not require any type of storage in the refrigerator and keeps for six months in the pantry. Preservation is ensured by a production process that takes into account the control of water activity, pasteurization, packaging in a protective atmosphere, and the use of several additives. These parameters act together synergistically, creating a product that can be stored at room temperature and, at the same time, is very similar to fresh pasta. Similar to a fresh food product, it does not require special seasoning, since already stuffed with a soft and tasty filling, therefore, once cooked, it can be served with simple sauces that enhance its flavor.
